The colour turns bright red, the sugar rises and the heat becomes more pronounced. Fruit picked too early has not set its colour; fruit left too long begins to wrinkle and cannot go into a fresh shipment. Fresh red chili wholesale: two buyer channels

Red chili pepper has a bright red colour, firm flesh and intense heat, and it serves two distinct groups of buyers:

  • Fresh channel: wholesalers selling to supermarkets, greengrocers and restaurants. Appearance decides here: glossy skin, uniform colour, and a green, crisp stem.
  • Processing channel: producers of sauces, pastes, pickles and dried chili. Colour intensity, ripeness and heat level decide here; size comes second.

Green and red: one plant, two products

Red chili and green chili usually come from the same plant, but in trade they are two separate products. Because red fruit stays on the plant longer, the total yield taken from the plant falls, and the unit price is higher than for green. Mixing the two colours in one lot counts as a defect: half-coloured fruit belongs in neither the green lot nor the red one.

Quality criteria to agree with a red chili pepper supplier

Export-grade red chili is selected against these criteria:

  • Colour: the whole fruit must be bright red.
  • Firmness: the pepper is harvested while the skin is smooth and the flesh firm. Fruit that has started to wrinkle is taken out of the fresh lot.
  • Skin: free of cracks, bruises and sunscald.
  • Stem: green and fresh; a darkened stem shows how long the fruit has been waiting.
  • Trueness to type: hot and sweet varieties are kept separate in the growing area, so no other type enters the lot.

Year-round supply and how to plan volumes

Thanks to protected cultivation, red chili is supplied all year round. Because the fruit needs time to colour, weekly volumes of red chili have to be planned earlier than for green. In winter quantities are limited, and product is reserved for buyers who share their programme in advance. At the end of summer the open-field crop joins in and volumes reach their peak; this is the best period for processing purchases. Cooling and transport temperature

The peppers are harvested with a short stem and cooled the same day. The longest shelf life is reached at 7.5 °C and a relative humidity above 95%; under these conditions that is 3–5 weeks. Fully ripe, coloured peppers tolerate chilling better than green peppers, but they still must not share a vehicle with fruit carried at 0–2 °C. Packaging and minimum load

Red chili is packed in cartons of two sizes: 30 × 40 × 12.5 cm and 60 × 40 × 15 cm.

The minimum load is planned by the truck: a standard 13.60 m refrigerated truck takes 33 euro pallets. All pepper varieties travel at the same temperature, so red chili can share a mixed truck with other peppers. HS code for fresh red chili

Fresh peppers fall under HS code 0709.60. In the Turkish customs tariff, sweet peppers are classified under 0709.60.10. For hot peppers, we recommend confirming the applicable tariff line with your customs broker before shipment.

Documents and residue control
