Red Chili Pepper

Red chilies are the same fruit as the green, left on the plant to ripen — which doubles the time the plant is occupied and concentrates both sugar and heat.

They are picked dry-skinned and firm; a chili that has begun to wrinkle on the bush is destined for drying, not for the fresh case.
