Cabbage White

White cabbage is one of the few vegetables that improves in storage: the outer leaves protect the head, and a firm cabbage cut in autumn will hold for months.

Heads are graded by weight and trimmed to two wrapper leaves — enough to protect, not so much that the buyer pays freight on leaf.
