Eggplant

Aubergines bruise where you hold them, so pickers cut them by the stalk and never touch the fruit. The mark does not show for a day — by then the case is loaded, which is why the discipline matters.

Grown under glass all year. Graded by length and by the gloss of the skin, which dulls as the fruit ages.
