Lettuce Yedikule

Yedikule is the tall romaine Istanbul built its salads on — upright, crisp-ribbed, more tolerant of handling than a soft butterhead.

Grown year round in the coastal fields. Trimmed at the base, cooled immediately, and stacked upright so the ribs carry the weight.
