Figs are picked twice a day in the heat of summer, morning and late afternoon, because a fig left one day too long on the tree splits at the eye and is finished as an export fruit.

The season runs June to October. Fruit goes into single-layer trays straight from the orchard — figs are not re-handled, not tipped and not stacked loose, since the skin carries no protection at all.
