Apricot

Apricots allow no second chances. The fruit ripens fast in June heat and softens faster, so the whole season is a matter of picking at the right hour and cooling within the same one.

We harvest at firm-ripe — coloured through but still solid to the thumb — which is the only stage that survives a journey. Fruit destined for distant markets goes by air; road transport covers Europe, chilled from the packhouse door.
