Köy biberi covers the small, irregular local peppers that never fit a calibration table — thin, twisted, and the ones Turkish kitchens actually reach for.

They are grown outdoors in small blocks and picked over several passes. Volumes are modest and sold to buyers who want the flavour rather than the uniformity.
