Grape Sultana

Sultana is the seedless grape that built Turkey’s table-grape trade. Small amber-green berries, thin skin, high sugar — eaten by the handful rather than the bunch, which is exactly how the retail market wants it.

Thin skin is also the difficulty: the fruit marks easily, so bunches are cut into the case in the vineyard and not handled again. Pre-cooling within two hours of picking is the rule.
