Lettuce Iceberg

Iceberg is sold by weight and firmness: the head must resist a squeeze. A loose head has been cut late and will not hold a week in the chiller.

Cut in the cool of the morning, vacuum- or air-cooled at once, packed six or nine to the case depending on size.
