Kırkağaç Melon

Kırkağaç is the yellow melon with the dark green flecks — a Turkish variety, thick-skinned and heavy, that keeps far longer than a Galia and travels accordingly. Season runs February to August.

Ripeness is judged at the stem: the melon is cut when the stalk separates cleanly under light pressure. Cut too soon and the flesh stays hard and flat-tasting; there is no recovering it afterwards.
