Galia Melon

Galia is judged by smell before anything else. When the netting on the rind stands out clearly and the blossom end gives a little under the thumb, the sugar is there — and that is when we cut, not a day earlier.

The season runs February to August, greenhouse crops opening it and open fields carrying it through summer. Melons are packed in single layers with the stem trimmed flush, since a stub punctures the fruit below it in transit.
