Nectarine

A nectarine is a peach without the fuzz, and that smooth skin changes everything about handling it: nothing hides a bruise, so every fruit is graded by eye as well as by size.

The crop comes in from June to September. Picked at firm-ripe, hydro-cooled the same day, and packed in single-layer trays where the buyer sells on appearance.
