Peach

Peaches are graded by hand because a machine cannot feel what matters: the fruit must be firm at the shoulder and just yielding at the tip. That is the state in which a peach survives a week and still tastes like a peach.

The season runs June to September, moving up the valleys as the summer goes on. Fruit is hydro-cooled within hours of picking and packed in single-layer trays with moulded liners.
