Medlar

Medlar is a fruit of the cold end of the year, picked from autumn into winter when most orchards are already finished. It is not eaten straight from the tree: the flesh softens and sweetens after harvest, and only then is it ready.

Small volumes, hand-picked, packed in shallow single layers because the fruit gives under its own weight once it starts to soften.
