Strawberry

Strawberries come out of the Antalya greenhouses through the winter, from December into May — the months when open-field Europe has none. That timing is the whole business case.

Berries are picked into the punnet they will be sold in and never transferred again. Forced-air cooling within the hour, then held at 0-2 °C; a strawberry loses a day of shelf life for every hour it spends warm.
