Plum Green Can (Hearth)

Can eriği is eaten unripe on purpose — hard, sour and green, with salt, in the few weeks of early spring when it appears. February to April, and then it is gone.

This is a fruit sold by texture, not sweetness: it must snap when bitten. Softening is the fault that ends a consignment, so cooling starts at the orchard and does not stop.
