Apple Starking

Starking is the red apple of the Turkish highlands — striped crimson over a yellow ground, sweet rather than sharp, and the one most often asked for by markets that sell fruit by appearance. Harvest runs September to December, storage to early summer.

Because colour sells this variety, we pick by colour break rather than by date, and grade tightly. The skin bruises more easily than a Granny Smith, so trays and single-layer cartons are used where the buyer wants presentation-grade fruit.
