Orange

Orange season on the Mediterranean coast opens in November and holds through April, carried by two different fruits: the early navels for eating, and Valencia later on for juice.

Fruit is clipped rather than pulled, washed, waxed and sized. Colour is a poor guide to ripeness in a warm autumn — sugar-acid ratio is measured before any block is picked.
