Dragon Fruit

Dragon fruit is grown under cover on the Mediterranean coast and picked from April to September. It is a cactus fruit: it does not ripen further once cut, so the picking day decides the eating quality the buyer receives.

We cut when the skin has turned fully and the bracts begin to soften, then handle the fruit in single layers — the flesh is firm but the skin marks at the slightest pressure, and a marked fruit loses its shelf value even though it eats perfectly.
