Grapefruit

Grapefruit comes off the trees of the Antalya plain from October, and the season carries through to April. Turkish fruit runs to the red-fleshed varieties — Star Ruby and Rio Red — which sell on colour as much as on taste.

Citrus is picked with clippers rather than pulled, because a torn button opens the fruit to rot in the container. Every consignment is washed, waxed and sized before packing.
