Kiwi

Kiwifruit is harvested hard in the autumn and ripens in store, which makes it one of the few fruits whose season is set by the warehouse rather than the orchard. Picking runs September to December; controlled storage carries supply through to May.

Fruit is tested for dry matter before harvest — cut too early and it never develops sugar, no matter how long it sits. After picking it is cured, graded by count per tray and held cold.
